Fried Chicken

Breading

  • 1-1/2 tsp black pepper
  • 3/8 tsp garlic powder
  • 3/16 tsp sage
  • 3/16 tsp coriander
  • 3/16 tsp ground ginger
  • 3/16 tsp cayenne pepper
  • 3/32 tsp ground clove
  • 3/32 tsp allspice
  • 3/32 tsp savory
  • 1/20 tsp marjoram
  • 1/20 tsp thyme
  • 5 tsp salt

Mix seasoning with 6:1 ratio flour (1 ¼ cups) and cornstarch (¼ cup)

Dunk chicken in egg wash, then flour/seasoning mix.  Deep fry at 375 for 5 minutes (dark meat chicken thighs - recipe enough for 8 thighs).  Also works great for taters (same method and time)
